Terroir, production method and maturation: The grapes are collected by hand from the vineyard, which rises 245-305 meters above sea level. The age of the vines growing in the slate garden varies between 20 and 56 years. The wine ferments spontaneously in used acacia barrels for 4 weeks at 20-22 °C. The wine matures for 6 months on all lees and 4 months on fine lees in old oak barrels.
Use: With veal schnitzel and candied orange peels.
Description: The mature aroma has apricot marmalade and caramelized lemon. The dry taste is rounded and mild in acidity, layered in fruitiness and long in the aftertaste.
