Terroir, method of production and maturation: The orchard located north of the Etna volcano is the first to mature among the estate's orchards. Made of volcanic ash, the shelter rises to a height of 650 meters in Castiglione di Sicilia. The vines are 50-80 years old. Hand harvesting. Fermentation in temperature-controlled steel tanks at 28-30°C. Spontaneous malolactic fermentation and maturation in French oak barrels of different sizes for 18 months. 20% of the barrels are new.
Use: As a companion to herb roast beef.
Description: The scent has herbal and aromatic flowers. Elegant, mouth-pleasing tannins support the ripe red fruitiness.
