Chablis, made from grapes from Guy Robin's old vines, bearing the name of its creator.
Terroir, production method and maturation: The grapes are hand-harvested from the vineyards located opposite the Vaillons Premier Cru plot and gently pressed. The wine is allowed to rest for 24 hours, after which it ferments with the help of wild yeasts in French oak barrels without temperature control. 10% of the barrels are new. After fermentation, the wine matures on lees for 12 months and is not clarified or filtered.
Usage: Excellent with fish and shellfish dishes such as smoked salmon or mussels. Also try with veal.
Description: The scent is lively, mineral and has citrus aromas. The multidimensional and intense taste is pure and long, with a good acid balance. The light aroma of oak is well integrated and it brings depth to the wine.
