Certified organic 100% Vermentino from the west side of the town of Patrimonio.
Terroir, method of production and ripening: The grapes are hand-picked from the mixed soil of granite and clay from 8-28-year-old vines in the plots of Parata and Batolaccio. They are pressed immediately, and the juice is allowed to settle in a cool place for 24 hours. The wine ferments with the help of a natural yeast strain in temperature-controlled steel tanks, while the fermentation lasts for a long time. The wine is allowed to mature on fine lees for 7 months before bottling.
Use: With ricotta ravioli or cottage cheese.
