A robust sparkling wine made from dark grapes.

Method of preparation: The grapes are harvested by hand in the Côte de Beaune region, on a 3-hectare vineyard in Maranges, where the soil is limestone clay. The grapes are compressed pneumatically and the juice is allowed to settle for a day before fermentation. The first fermentation takes place in temperature-controlled steel tanks at a temperature of 20°C. Malolactic fermentation is allowed. Second fermentation and maturation takes place in bottles at around 15°C in cellars. The wine is allowed to mature on the lees for 18 months before recorking. Dosage 12 g/l.

Usage: Throughout the meal.

Description: The clean characteristic aroma has ripe red apple, a little floweriness and a light toastiness. The dry taste is rich and directional, with distinctly toasty autolytic characteristics.
