A magnificent Blanc de Blancs from the delicate village of Cramant.
Terroir, production method and ripening: The grapes are collected 100% from limestone orchards in the Grand Cru village of Cramant. Only the wine from the first pressing is used and the juice is allowed to settle for 12-24 hours without enzymes before fermentation. The wine ages in oak barrels of different sizes, where it also matures for 8 months. Partial malolactic fermentation is allowed. The second fermentation takes place in the bottle, where the wine matures for another 40 months before recorking. The 5 g/l dosage consists of wine matured in oak barrels. Description: A multi-layered, multi-dimensional scent with flowers, distinct citrus and a bit of toast. The dry taste is very long and the oak is nicely integrated. A very stylish and long-lasting ensemble.
