Wine from vines growing in diverse clay soil.

Terroir, production method and maturation: The grapes are hand-picked from the Boucheran valley, located between the premier cru vineyards of Vaillons and Montmains. After pneumatic pressing, the wine ferments spontaneously in steel tanks and malolactic fermentation is also allowed. The wine matures for a year in old oak barrels.

Use: As a companion to creamy mushroom soup.

Description: Rich in the aroma, which distinguishes roastiness and ripe citrus. The dry taste is broad and richly acidic at the same time, and overall the wine is very gastronomic.

Eleni et Edouard Vocoret

German-Greek Eleni and Chablis native Edouard met in New Zealand, where they worked at Allan Scott Wines in Marlborough. Elen's Greek father was from a farming family whose repertoire also included winemaking, but only for the family's own use.
