Mont de Milieu Premier Cru Chablis made from organically grown grapes.
Terroir, production method and ripening: The grapes are harvested by hand from a plot of 0.75 ha, which is located on the right side of the Serein river, at a very high altitude. The shelter faces southeast and the vines are about 27 years old. Currently, only 0.5 ha of the plot is in production, as the rest has just been replanted. The soil is filled with white, calcareous clay and is deep. The grapes are pressed pneumatically and fermentation takes place in oak barrels. The wine also undergoes malolactic fermentation spontaneously, after which it is allowed to mature for 18 months in barrels without the addition of fines. The wine is not clarified, but it is lightly filtered before bottling.
Use: With sole meunière.
Description: Rich aroma with yellow fruitiness. The taste is dry and creamy, very layered, and with the acidity also tense.
