Dark berry and supple red wine.
Terroir, production method and ripening: The grapes are collected by hand from seven different vineyards, which are 6-47 years old. Two Syrah plots plus Cinsault and Grenache are located in the slate Kasteelberg area on the Roundstone farm, and Tinta Barocca, Carignan and one Syrah plot in the granite Paardeberg area. The grapes are cooled, after which the stems are removed from 40% of the grapes. The wine ferments spontaneously for four weeks as the temperature rises to max. 28°C. After fermentation, the wine is pressed and malolactic fermentation takes place in oak barrels. After blending, the wine matures for 11 months in large oak vats and 225- and 500-liter oak barrels that are 3-5 years old. The wine is bottled without clarification and filtering.
Use: With venison pastrami and lingonberry sauce.
Description: The scent has dark berries and a bit of floweriness. The medium-bodied taste is approachable fruity, the tannins are pleasantly ripe and the whole is balanced and mild.
