Elegant Ripasso, whose partially dried grapes come from the slopes of Mezzane, about 15 kilometers from the opera city of Verona

Terroir, production method and maturation: The grapes are harvested manually from the vineyards located in Mezzane, at an altitude of about 400 meters. Valpolicella wine, which is the basis of the wine, is made from 70% fresh and 30% dried grapes. 10% of the remaining wine from the Amarone production is added to the wine with its skins, which contain about 10g/l of residual sugar. The whole is allowed to macerate in steel tanks for 20-25 days. After maceration, the wine has about 5g/l of residual sugar. The wine matures for two years in 50% steel tanks and 50% in used barrique barrels, half of which are French and half American. Before bottling, the wine is clarified with bentonite and filtered.

Use: Red meat dishes, especially game and reindeer.

Description: The aroma has ripe red berries, cherry and fig. A long and intense taste that repeats the aroma world of the fragrance.

The family farm of San Cassiano is located in the Italian province of Veneto in the famous Valpolicella. The grandfather of the farm's current owner, 40-year-old Mirko Sella, planted the first vines on the farm in 1959.
